Contrary to what the name implies (Baicha translates to 'white'), Anji Baicha is actually a green tea. The name refers to the pale green of the specific tea plant’s leaves used to make Anji Baicha. Anji Baicha is one of the most popular green teas in China, known for its elegance, however it has only existed since the 1990s.
Similar to Dragonwell and other Chinese green tea, Anji Baicha is pan-fried to stop oxidation. The leaves are then rolled together to form its needle shape.
